Chocolate and Orange Potato Cake

I've not actually tried this but am told it's very good.

Chocolate and Orange Potato Cake

Preparation Time: 25 mins
Cooking Time: 30-40 mins

Serves: 4

Ingredients

120g potatoes, peeled, boiled and mashed
225g demarara sugar
225g self-raising flour
30g cocoa powder
175g butter
3 eggs, beaten
110g plain chocolate, melted
grated rind and juice of 1 orange


Instructions

1. Preheat oven to 180C and grease and line a 24cm cake tin.

2. In a large bowl cream the mashed potato, butter and sugar until light and fluffy.

3. Beat in eggs and gradually stir in the melted chocolate and juice and rind of an orange.

4. Lightly fold in the cocoa powder and flour and pour the mixture into the cake tin.

5. Bake in the centre of the oven for 30-40 minutes.

Hepzi, Please, please stop posting these recipes, every time I read one I am looking around for a slice of cake. :lol: We are just nipping out to Tesco, so it is your fault if I come back with a chocolate cake. ;)

:roll: No pleasing some folks! Maybe I should save 'the best stuff' for the blue side! ;) :lol:

Of course, these recipes would be far healthier than even Tesco's finest (which I loath) and would give you something to do now that you have all this time on your hands as a retiree. :-) :bs:

I have plenty to do thank you very much ;) Just nipping out to get some more stuff to re-pot Mrs H's Moth Orchids, hey! maybe the garden center tea room has chocolate cake! :up

So! it is all your fault Hepzi :P if you had not posted all these recipes, then I ................................ would not have felt the need to stop for Fish & Chips while we were out as Mrs H decided that a 40 mile round trip to a particular garden center was in order, so your to blame talking of food. ;)

I'm working on a new diet. If I can't lose weight myself I'm going to assist others to put it on thus making myself look trim and sophisticated next to them. :))

Did you manage to eat chocolate cake whilst you were out too?

Wowwwwwww - I dunno about H and Mrs H but after reading your recipes the waistband on my pants got tight and I can't get my mind off of what is down in the kitchen and the pantry.

Thinking about it, although Egyptian potatoes are wonderful for flavour and texture, I'm not so sure they'd be good for cakes. I think this cake would probably be better with the dry, fluffy, floury type potato.

What's this with all the vegetables in the chocolate cakes? I like chocolate in my chocolate cake and my potatoes nicely roasted with roast parsnip, veg and a nice slice of roast beef! A nice gravy to pour over and that's me happy. BTW, Hepzi, I HAVE to lose weight this year as my daughter is getting married and I refuse to be the heffalump in the corner for the pics. Steps will have to be taken if you persist in posting recipes for my downfall.

I've always had an affinity with elephants (for more reasons than one!). It' only later in life that the pink ones came - I just wish I could waddle as fast as it walks. ;)

:lol: I tend to agree with you. (Except the last sentence of course!)
I rarely bake these days as the electric oven I have here is small and useless. I am spoilt though by a colleague who regularly bakes and brings a slice or two in for me. She also bakes cakes for me for special occasions. :)
