When I'm in Trinidad I love this recipe and finally got a copy of it. My question was - do you now what Chadon Beni might be IN ENGLISH? OR what could be substituted for it? I've asked my Trini friends but I typically get a blank look with a repetition that Chadon Beni is Chadon Beni. Turns out it is CILANTRO!
I went through the same thing with SIVE - turn out we were taking chives although the chives that grow there are stronger than the mild version I have here.
This really is super good and quite an authentic recipe
PEPPER ROTI
For Roti
3 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. sugar
1 1/2 cup water
1 tbsp. oil
2 tbsp. butter
For pepper filling
4 hot peppers (Use as much or as little Hot Pepper as you prefer, this is just a guide)
2 cups grated potato
1 cup grated carrot
1 bundle Chadon Beni (Bandanyia)
10 cloves garlic
1/4 onion, chopped
2 cups grated cheese
salt to taste
2 pimento peppers, chopped
Method:
1) Mix all the ingredients for the roti, cover and set aside to rise.
2) Wash and grate the potatoes.
3) Blend the Hot pepper, bandanyia, garlic and pimento peppers together.
4) Add blended mixture to potatoes and grate carrots into mixture.
5) Divide dough into parts and roll out each to same size.
6) Add salt to mixture and spread onto one of the rolled out roti.
7) Spread grated cheese over the mixture.
Cover with the other “Roti” using rolling pin, lightly roll to seal the edges.
9) Cook over low heat, turning so roti cooks evenly, allowing to brown properly, you will need to rub both sides with oil or butter to ensure you get a nice golden crust.
10) Cut into small pieces, enjoy carefully as depending on the heat level of the peppers, your pepper roti may have different heat levels.
