LEMON MERINGUE PIE
Anyone for a piece lemon curd filled meringue pie , it's the first time I've tried meringue & have to say it's turned out not bad at all, now the only problem is getting it out of tin

Mmm, now that looks very tasty Kiya : save some for the rest of us
Now that will teach you to either use a push up base tin or use some lining paper in your dish, but me I would just sit down and scoff it from the tin dish

Love lemon meringue pie and the meringue part is actually pretty easy to make. Love seeing all the peaks and tips turn brown.

Re: LEMON MERINGUE PIE
It is yummy & going fassssssssstttttttttt
Horus I tried several shops today for a flat fluted loose bottom tin but no luck & for ceramic baking beans, I guess I have to order online
I coated the tin with butter before putting the pastry in to bake so it's came out ok & non sticking

Re: LEMON MERINGUE PIE
Just had a google for glass pie plate, some of them really nice & ornate but I would have the same problem getting the pie out unless it would slide out very easily .
It would be nice to see the pie with its fluted edges on a plate hence the need for a loose bottom tin

Re: LEMON MERINGUE PIE
I think I'm not completely following. I thought the issue was the pie crust sticking onto the metal pie pan. I'm not getting the push up base? I've never seen anybody take a complete pie out of a pie plate or pie pan and not understanding 'push up base.'
I always thought you just sliced into the pie in the pan and then used the pie lifter utensil (looks like a spoon handle with a big flat triangle approximately the size of a slice of pie) to slip the pie out. What is this 'push up base please?'

Re: LEMON MERINGUE PIE
LLL, it would be similar to the round cake tins you can buy that have the band that clasps around the base to form a cylinder that you can release to leave the cake sitting on a flat base. Although in this case it would be a fancy edge fluted cake tin, but the flat part of the base would fit loosely, so when you put pressure onto the flat base it would lift upwards and out of the fluting leaving the pie with it's shaped crust on a smaller flat base. Alternatively try and imagine that you could pick up the pie by the outer fluted rim and then place the centre part onto something much smaller like a coffee mug and lower it down, the outer fluted part would lower away from the centre base and you could slide the pie off the now flat base.

Ohhhh - wow - there is nothing like that here that I am aware of. Be nice if there was but there is nothing like that here. I know the cake type pans you're talking about and while I know of them they're not common. I've never seen that type related to a pie.
